- 2 tablespoons of olive oil
- 2 medium diced onions
- 2 smashed garlic cloves
- 500 g of diced skinless chicken fillet
- Salt to taste
- 1 diced green pepper
- 1 diced red pepper
- 1 diced yellow pepper
- 1 tea-cup of canned mushrooms cut in half
- 1/4 cup of soy sauce
- 1 tablespoon of cornstarch
- 1/2 cup of water
- 2 tablespoons of roasted peanuts
In a frying pan or a large pan, mix half the olive oil, onion, garlic, and fry.
Remove them and put them in a plate.
In the same pan, add the salt and the rest of the olive oil, and fry the peppers and mushrooms for 5 minutes.
Remove them and put them in another plate.
Also in the same pan, put the chicken and fry until golden brown.
Put all the ingredients in the frying pan once again, mix them well with a wooden spoon, and sauté for 2 more minutes.
In a cup, mix the soy sauce, cornstarch and water.
Mix well and add the chicken mixture.
Cook it by continuously mixing until a thick sauce is formed.
Put it in a platter and pour some peanuts.
Serve it hot.
